Shepherd's Pie with Palmer Farms Lamb

Ingredients

For the Filling:

  • 1 pound Palmer Farms ground lamb

  • 1 medium onion, diced

  • 2 carrots, diced

  • 2 cloves garlic, minced

  • 1 cup frozen peas

  • 2 tablespoons Palmer Farms Herb Spice Mix (or alternative spice mix)

  • 1 tablespoon tomato paste

  • 1 cup beef or lamb broth

  • Salt and pepper to taste

  • 2 tablespoons olive oil

For the Mashed Potatoes:

  • 2 pounds potatoes, peeled and cubed

  • 4 tablespoons unsalted butter

  • ½ cup milk

  • Salt to taste

Instructions

  1. Prepare the Mashed Potatoes:

    • In a large pot, bring salted water to a boil and add the cubed potatoes. Cook until tender, about 15 minutes. Drain and return to the pot.

    • Add butter, milk, and salt to the potatoes. Mash until smooth and creamy. Set aside.

  2. Cook the Filling:

    • In a large skillet, heat olive oil over medium heat. Add diced onions and carrots, cooking until softened, about 5-7 minutes.

    • Stir in minced garlic and cook for an additional minute, until fragrant.

    • Add ground lamb to the skillet, breaking it apart with a spoon. Cook until browned, about 8-10 minutes.

    • Stir in the Palmer Farms Herb Spice Mix or your alternative spice mix, tomato paste, and broth. Mix well and bring to a simmer. Allow to cook for 5 minutes, then add peas. Season with salt and pepper to taste.

  3. Assemble the Shepherd's Pie:

    • Preheat your oven to 400°F (200°C).

    • Transfer the lamb filling to a baking dish, spreading it evenly. Top with the mashed potatoes, smoothing them out to the edges to seal in the filling.

    • Optionally, create texture on the mashed potatoes using a fork.

  4. Bake:

    • Place the dish in the preheated oven and bake for 20-25 minutes, or until the top is golden brown.

  5. Serve:

    • Allow the shepherd's pie to cool for a few minutes before serving. Enjoy the rich flavors of Palmer Farms lamb with the warmth of homemade comfort food.

Alternative Spice Mix (if Palmer Farms Herb Spice Mix is unavailable):

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • 1 teaspoon dried oregano

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

Mix all ingredients together and use in place of the Palmer Farms Herb Spice Mix for a delightful alternative.
