Lamb Curry Recipe

Ingredients

  • For the Curry:

    • 2 pounds Palmer Farms lamb, cut into cubes

    • 2 tablespoons vegetable oil

    • 2 onions, finely chopped

    • 4 cloves garlic, minced

    • 1 tablespoon ginger, minced

    • 2 tablespoons Palmer Farms Indian spice mix (or alternative spice mix, see below)

    • 1 can (14 oz) diced tomatoes

    • 1 cup coconut milk

    • 2 cups chicken or vegetable broth

    • Salt and pepper, to taste

    • Fresh cilantro, for garnish

Alternative Spice Mix (if not using Palmer Farms Indian Spice Mix):

  • 1 teaspoon cumin seeds

  • 1 teaspoon coriander powder

  • 1 teaspoon turmeric powder

  • 1 teaspoon garam masala

  • 1/2 teaspoon chili powder (adjust based on heat preference)

  • 1/2 teaspoon paprika

Instructions

  1. Sear the Lamb:

    • In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat.

    • Add the lamb cubes in batches to avoid overcrowding. Sear until browned on all sides, about 5-7 minutes. Remove the lamb from the pot and set aside.

  2. Sauté Aromatics:

    • In the same pot, reduce the heat to medium and add the chopped onions. Cook until translucent, about 5 minutes.

    • Stir in the garlic and ginger, cooking for an additional 1-2 minutes until fragrant.

  3. Add Spices:

    • Add the Palmer Farms Indian spice mix (or alternative spice mix) to the pot. Stir well and cook for 1 minute to toast the spices.

  4. Combine Ingredients:

    • Return the browned lamb to the pot. Add the diced tomatoes, coconut milk, and broth. Season with salt and pepper to taste. Stir to combine.

  5. Simmer:

    • Bring the mixture to a gentle boil. Cover the pot and reduce the heat to low. Let it simmer for about 1.5 to 2 hours, or until the lamb is tender and the flavors have melded together. Stir occasionally.

  6. Adjust Seasoning:

    • Taste and adjust seasoning if necessary, adding more salt, pepper, or spices according to your preference.

  7. Serve:

    • Garnish with fresh cilantro before serving. Serve over steamed basmati rice or with naan bread for an exquisite meal.
