Lamb Curry Recipe
Ingredients
For the Curry:
2 pounds Palmer Farms lamb, cut into cubes
2 tablespoons vegetable oil
2 onions, finely chopped
4 cloves garlic, minced
1 tablespoon ginger, minced
2 tablespoons Palmer Farms Indian spice mix (or alternative spice mix, see below)
1 can (14 oz) diced tomatoes
1 cup coconut milk
2 cups chicken or vegetable broth
Salt and pepper, to taste
Fresh cilantro, for garnish
Alternative Spice Mix (if not using Palmer Farms Indian Spice Mix):
1 teaspoon cumin seeds
1 teaspoon coriander powder
1 teaspoon turmeric powder
1 teaspoon garam masala
1/2 teaspoon chili powder (adjust based on heat preference)
1/2 teaspoon paprika
Instructions
Sear the Lamb:
In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat.
Add the lamb cubes in batches to avoid overcrowding. Sear until browned on all sides, about 5-7 minutes. Remove the lamb from the pot and set aside.
Sauté Aromatics:
In the same pot, reduce the heat to medium and add the chopped onions. Cook until translucent, about 5 minutes.
Stir in the garlic and ginger, cooking for an additional 1-2 minutes until fragrant.
Add Spices:
Add the Palmer Farms Indian spice mix (or alternative spice mix) to the pot. Stir well and cook for 1 minute to toast the spices.
Combine Ingredients:
Return the browned lamb to the pot. Add the diced tomatoes, coconut milk, and broth. Season with salt and pepper to taste. Stir to combine.
Simmer:
Bring the mixture to a gentle boil. Cover the pot and reduce the heat to low. Let it simmer for about 1.5 to 2 hours, or until the lamb is tender and the flavors have melded together. Stir occasionally.
Adjust Seasoning:
Taste and adjust seasoning if necessary, adding more salt, pepper, or spices according to your preference.
Serve:
Garnish with fresh cilantro before serving. Serve over steamed basmati rice or with naan bread for an exquisite meal.
