Mediterranean Lamb Meatballs
Ingredients
For the Lamb Meatballs:
1 lb premium quality lamb (from Palmer Farms)
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup fresh parsley, finely chopped
1 large egg
2 garlic cloves, minced
1-2 tablespoons Palmer Farms Greek spice mix
Salt and pepper to taste
Olive oil for frying
For the Dipping Sauce:
1 cup Greek yogurt
1 tablespoon lemon juice
1 tablespoon fresh dill, chopped
Salt to taste
Instructions
Prepare the Meatballs:
In a large bowl, combine the lamb, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, and Palmer Farms Greek spice mix. Season with salt and pepper.
Mix the ingredients gently until just combined, being careful not to overwork the meat.
Shape the Meatballs:
Roll the mixture into 1.5-inch meatballs and place them on a parchment-lined baking sheet. You should yield about 16 meatballs.
Cook the Meatballs:
Heat olive oil in a large skillet over medium heat. Once hot, add the meatballs in batches, ensuring not to overcrowd the pan.
Cook for about 4-5 minutes on each side, or until browned and cooked through, with an internal temperature of 160°F.
Prepare the Dipping Sauce:
In a small bowl, mix together Greek yogurt, lemon juice, dill, and salt. Adjust seasoning to taste.
Serve:
Serve the meatballs hot, accompanied by the yogurt dipping sauce.
Alternative Spice Mix
If you do not have Palmer Farms Greek spice mix, you can create a simple alternative using the following blend:
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon ground cinnamon
1/2 teaspoon garlic powder
Salt and pepper to taste
Mix these spices together and use in the meatball mixture as you would our Greek spice mix.
