Lamb Koftas with Greek Spice Mix
Ingredients
For the Koftas:
1 pound Palmer Farms ground lamb
2 tablespoons Palmer Farms Greek spice mix
1 medium onion, finely grated
2 cloves garlic, minced
1 egg, beaten
1/4 cup fresh parsley, chopped
Salt and pepper to taste
Olive oil, for grilling
Alternative Spice Mix (if Greek spice mix is unavailable):
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon paprika
1/2 teaspoon cinnamon
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
In a large mixing bowl, combine the ground lamb, Greek spice mix (or alternative spice mix), grated onion, minced garlic, beaten egg, parsley, salt, and pepper.
Using your hands, gently mix until all ingredients are well combined, but be careful not to overwork the meat.
With damp hands, form the mixture into elongated oval shapes or patties, about 2-3 inches long.
Preheat a grill or grill pan over medium-high heat. Lightly brush with olive oil.
Once hot, add the koftas to the grill, cooking for about 4-5 minutes on each side or until they are nicely browned and cooked through.
Remove from the grill and let rest for a few minutes before serving.
Serve the koftas with warm pita bread, tzatziki sauce, and a fresh salad for a delightful meal.
