Traditional Leg of Lamb Recipe

Ingredients:

  • 1 leg of lamb, bone-in (approximately 5-7 pounds)

  • 2 tablespoons Palmer Farms Herb Spice Mix

  • 4 cloves garlic, minced

  • 2 tablespoons olive oil

  • 2 tablespoons fresh rosemary, chopped

  • 1 tablespoon fresh thyme, chopped

  • Salt and pepper, to taste

  • 1 cup red wine (optional, for deglazing)

  • 2 cups vegetable or chicken broth

Instructions:

  1. Prepare the Lamb:
    Preheat your oven to 350°F (175°C). Pat the leg of lamb dry with paper towels and place it in a large roasting pan.

  2. Make the Marinade:
    In a mixing bowl, combine the Palmer Farms Herb Spice Mix, minced garlic, olive oil, chopped rosemary, and chopped thyme. Add salt and pepper to taste.

  3. Season the Lamb:
    Rub the marinade generously over the entire surface of the lamb, ensuring that it is well-coated.

  4. Roast the Lamb:
    Place the lamb in the preheated oven and roast for about 1.5 to 2 hours, or until it reaches your desired level of doneness (medium-rare is approximately 145°F/63°C). Aim to baste the lamb with its juices every 30 minutes.

  5. Rest the Lamb:
    Once cooked, remove the lamb from the oven and let it rest for at least 15 minutes before slicing. This allows the juices to redistribute for a tender and flavorful result.

  6. Make the Gravy (Optional):
    For a delightful gravy, place the roasting pan over medium heat on the stovetop. Add red wine to deglaze the pan, scraping up any flavorful bits. Add broth and simmer until reduced and thickened. Season to taste.

Alternative Spice Mix

If you do not have Palmer Farms Herb Spice Mix, you can create a simple alternative using these herbs and spices:

  • 2 teaspoons dried oregano

  • 2 teaspoons dried rosemary

  • 2 teaspoons dried thyme

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • Salt and black pepper to taste
